Simple Avocado Egg Rolls

I don’t know how I managed to get pictures without devouring these. They were so delicious. I, seriously, have daydreams about the avocado egg rolls at BJ’s Brewhouse, but they hare so fatty, there was no point in recreating them at home. It would be dangerous. So I opted to make a lighter option. I tried to keep everything fresh and simple. Tom, did point out, they don’t taste exactly the same as BJ’s, but that’s because there is no extra fatty cream cheese and I didn’t fry them. I also served them with a Sweet Basil Lime Dipping sauce, which I thought wen’t very nicely and was a very healthy alternative to the fatty mayo and sugar based dipping sauces from the restaurants. They were so good and satisfying with zero guilt.

Simple Avocado Egg Rolls with Sweet Basil Lime Dipping Sauce

  • 3 Avocados
  • Red onion
  • Sun dried tomatoes
  • Sun dried red peppers
  • Cilantro
  • Egg Roll wrappers
  • Small clove garlic
  • 1 lime
  • 1 cup basil
  • 1 tsp honey
  • 1tbsp water
  • 3 tbsp olive oil
  • 1/2 tsp salt.

Preheat oven to 400F.

In a large bowl combine ingredients to taste. I used about 1/8 cup sun dried tomatoes, and a few sun dried red peppers to add a little zing. I added about 2 tbsp  of finely diced red onion and a handful of cilantro. With ingredients like these, it’s best to go with personal preference.

Place an eggroll wrapper on a clean flat surface. Place about 1/4 cup of avocado mixture in the center. To wrap, pull up the bottom corner, then bring both outer ends to the center.  Using a small bowl of water, wet the edge of the top corner and roll. Set on an cookie sheet. I gave my cookie sheet a quick spray with oil. After all your eggrolls are wrapped, give them another light spray of oil. Bake for 15-20 minutes

While the eggrolls are baking, in a blender, blend 1 small clove of garlic, 1 cup basil, 2 tbsp lime juice, 3 tbsp olive oil, 1 tbsp water, 1/2 tsp salt and 1 tsp honey. Blend well and set aside in a small bowl for dipping.

Eggrolls will be super hot when removed from the oven so give them a while to cool and enjoy!

    I really want to make these for my book club! How many do they make? Looks like 8 in the pic. Is that how many the ingredients listed make?

      My batch had 12, I tend to put less of the avo mixture in each. It only shows about 8-10 in the pic because I ate some! Hahaha
